We are inspired by community based organizations and projects of all kinds, but particularly those that focus on improving access to food and open space, addressing the needs of our city's most vulnerable populations, and facilitating positive discussions about wellbeing, body image, and disordered eating recovery. Covenant House is the

(2019 - present) Covenant House provides housing and supportive services to youth facing homelessness in NYC. As the staff nutritionist, Eling ensures that healthy, varied meals are provided to youth living on-site, and develops programming to prepare youth for living and cooking independently.

(2018 - present) Brooklyn Queens Land Trust is a volunteer-led organization that conserves and preserves open space as community gardens in Brooklyn and Queens. Eling is the Board Treasurer, and raises city funds and manages contracts of $100,000+ per year to support community gardens.

(2016) With a small team of Taipei-baased dietitians, Eling co-founded Little Kitchen (食農小廚房) in Taipei, Taiwan. It was a 12-week after-school cooking program for elementary students, focusing on introducing cooking techniques and new ingredients to children.
